Power Exhaust Solutions was created after uncovering a critical issue inside the kitchen exhaust system at Canadian Honker, one of Rochester’s long-standing restaurants.

At a glance, the system appeared to be properly maintained. Routine cleanings were being performed, complete with reports and documentation. But a deeper inspection revealed that only “accessible areas” had been serviced—leaving large portions of the system untouched.

Over time, grease had built up deep within the ductwork, plenum, and fan system, forming hardened, carbonized layers that routine maintenance could not address.
The restaurant had unknowingly been receiving
surface-level cleaning rather than full-system care.

Once identified, the solution required a full restoration—multiple nights of overnight work, intensive degreasing, duct cleaning, and complete system pressure washing. The result was a fully restored system with improved airflow, reduced fire risk, and a clear path for proper ongoing maintenance.

But the biggest realization was this:
this problem wasn’t unique.

Many restaurants rely on routine hood cleaning services without knowing what’s happening deeper inside their exhaust systems.
